A thali meal is the quintessential culinary experience in India, whether as part of a cultural tradition or in everyday life. A feast for the eyes, it is an array of colours, flavours and textures. According to Ayurveda, a perfect meal should be a perfect balance of six flavours: sweet, salty, bitter, sour, astringent and spicy. The thali offers all this on a single plate. A thali consists of at least 10 dishes made from a variety of ingredients, including vegetables, pulses and cereals. The dishes served in a thali differ from region to region.
