Ingredients:

  • 2 cups of fresh peas (or frozen, thawed)
  • A handful of spinach
  • A handful of mixed nuts (cashews, almonds, walnuts, pistachios), soaked
  • 2 green onions, chopped
  • 2 cloves of garlic, minced
  • 3 cups of vegetable broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin seeds
  • Salt and pepper to taste
  • Toppings: A few boiled peas, roasted seeds, chopped fresh herbs, a dollop of yogurt or sour cream (optional)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the cumin seeds and wait for them to sizzle. Then, add the chopped green onions and minced garlic, and sauté until softened, about 3-4 minutes.
