SPRING RECIPE : FRESH PEA SOUP
In each of our articles, Anou shares an original recipe to let you discover the flavors of À Table chez Anou at home. Created by Anou and her talented sous chef, this fresh pea soup is a delicious way to enjoy the vibrant flavors of spring.
Ingredients:
- 2 cups of fresh peas (or frozen, thawed)
- A handful of spinach
- A handful of mixed nuts (cashews, almonds, walnuts, pistachios), soaked
- 2 green onions, chopped
- 2 cloves of garlic, minced
- 3 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 teaspoon of cumin seeds
- Salt and pepper to taste
- Toppings: A few boiled peas, roasted seeds, chopped fresh herbs, a dollop of yogurt or sour cream (optional)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the cumin seeds and wait for them to sizzle. Then, add the chopped green onions and minced garlic, and sauté until softened, about 3-4 minutes.
- Add the fresh peas to the pot and sauté for an additional 2 minutes.
- Pour in the vegetable broth and add the soaked nuts. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes, until the peas are tender.
- Use an immersion blender to purée the soup until smooth. Alternatively, you can carefully transfer the soup to a blender, blend until smooth, and then return it to the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with your choice of toppings.
